Enchilada Stuffed Shells



Hey Guys! 
So I was on pinterest the other day. I came across this Enchilada Stuffed Shells recipe. I like Mexican food, and I love pasta, so I figured I might try it.

I did change the original recipe just a little bit.

Ingredients

  • 1 box of Jumbo Pasta Shells
  • About 1-2 pounds of Ground Beef (I just use a small package)
  • One Large can of Refried beans
  • 2 cans of Enchilada Sauce
  • 1 two-cups bag of mexican cheese
  • 1 onion diced
  • 1 clove of Garlic diced finely
  • 1 bushel of Cilantro (optional)

So in the original Recipe, you only used one kind of enchilada sauce. I just wanted to try two different kinds, so I used red enchilada sauce and green sauce. I love green sauce :) I did have to use two different casserole dishes for this.

Instructions to make Enchilada Shells
1. Preheat your oven to 350. Boil a pot of water for your noodles. Cook the noodles as directed on the box.
2.Brown your Ground beef. Once cooked, drain the grease. Season your ground beef with taco seasoning. (My sister makes taco seasoning homemade, but you can buy taco seasoning at your grocery store) Add your onions and garlic to your Ground beef. Let them cook until the onions are nice and Golden brown. You can use a separate pot to cook your beans, but I just stirred them in with the ground beef. Also, you need to add about 1 cup of your cheese to the bean and meat mixture.
3. Once your noodles are done cooking, strain them and rinse them with water. This will make it easier for you to stuff the shells.
4. Like I said, I used two different kinds of sauce. If you use one kind, you will need one 9x13 casserole dish. If you use two different kinds of sauce like I did, I used one circle dish and one 8x8 square casserole dish. These are the only two we had! In your dish, you will pour a little bit of the enchilada sauce onto the bottom. Make sure it does cover all of the bottom of the dish. This will prevent the sticking of the noodles to the dish.
5. Spoon your bean, cheese, and bean mixture into your shells. Place them in to your dishe(s). Pour your remaining enchilada sauce over the noodles. Pour the rest of your cheese over the noodles.
6. Bake until the cheese is melted. (About 20 minutes) I do not bake this covered.
7. Top this with cilantro.--I love cilantro :)  I also top this with sour cream. You can really top it with any taco fixings you like.

 I really have to say that this is delicious! The good thing is this recipe doesn't cost a lot of money in my opinion. It was roughly around 10 dollars for everything I bought. It also can be very flexible. You can add anything you want or take any ingredient away. It's really good and I highly recommend it!
